Mango semolina and rice pudding

A delicious dessert which can be served warm in winter or cold in summer!
1 cup rice
1 cup semolina
1/2 cup butter or ghee
2 pints milk
1 cup sugar
4 fresh mangoes (puréed)
1/2 cup ground almonds
Pinch saffron
Pinch elachi (cardamom) powder
Melt the butter in a pan and add the semolina. Let the semolina cook for a few minutes but don’t let it burn. Once it has slightly changed colour then add the sugar and the milk. Now add the rice. Give this a good mix then let it cook on a slow heat. When the rice is cooked and the mixture has thickened add the puréed mangoes and saffron and elachi. Finally add the almonds (leaving a bit for garnishing). Give the whole mixture a good mix and remove from the heat. Place into serving dishes and garnish with the remaining almonds.
This dessert can be served warm although I prefer it cold; if you wish for it to be cold leave it in the fridge until it has cooled enough to serve.
